It’s winter… in more places than ever across the country. People, especially those in RVs that are trapped by the weather, are struggling with cabin fever. Here’s an idea to try. It should add a little fun to a cold snowy day in five easy steps.
1. Gather up what you need:
A microwave oven
A large mug that is microwave safe
A tablespoon to measure stuff
4 Tablespoons of flour
9 Tablespoons hot chocolate mix
1 Egg
3 Tablespoons water
3 Tablespoons oil
Cooking Spray
Dish for finished cake
1 or 2 scoops of ice cream, if desired
2. Combine ingredients:
Lightly spray the interior of the large mug
Measure and mix the flour and hot chocolate mix in the mug
Crack the egg into the mug and stir until dry ingredients are moist
Be sure to scrape sides and bottom of mug to mix it well
Add water and oil and mix again
Optional: Toss in some chocolate chips. They will sink to the bottom but add to the taste and sweetness.
3. Bake:
Put mug into the microwave and cook on high for 3 minutes. The cake will begin to rise above the rim of the mug and settle back down when the microwave stops. The mug handle may be hot. Safely remove mug from microwave.
4. Serve
Turn your cake out onto a dish and break it into quarters. It may look damp and wrinkled on the outside and this makes it look better. Cool just a bit and eat as is or add ice cream, chocolate, caramel or butterscotch syrup.
5. Yum. Enjoy your Cup o’ Cake!
